A chewy, no-bake oat-and-honey roll-up with a sweet, toasty flavour—perfect for lunchboxes and snack attacks.
Step 1: Toast the oats (better flavour)
Heat a large skillet over medium heat. Add the oats (and coconut, if using) and toast, stirring constantly, until lightly golden and nutty-smelling, about 3–5 minutes. Tip into a bowl and let cool for 5 minutes (hot oats can make the mixture oily).
Step 2: Make the sticky binder
In a small saucepan over low heat, add peanut butter, honey, sugar, oil (or butter), cinnamon, and salt. Stir until smooth, glossy, and pourable, 1–2 minutes. Don’t boil—just warm enough to combine. Stir in vanilla if using.
Step 3: Combine
Pour the warm binder over the toasted oats. Mix firmly with a sturdy spoon or spatula until evenly coated. If it looks dry and won’t clump when squeezed, add water 1 tbsp at a time until it holds together like a firm cookie dough.
Step 4: Press into a thin sheet
Line a baking tray (or cutting board) with baking paper. Scrape the mixture onto it, then place another sheet of baking paper on top. Roll or press into a rectangle about 20 x 25 cm (8 x 10 in) and roughly 6–8 mm thick. Press firmly—this is key so it rolls without cracking.
Step 5: Chill to set
Refrigerate for 1 hour, or until firm enough to lift cleanly and slice without crumbling.
Step 6: Cut and roll
Peel off the top paper. Using a sharp knife, cut the slab into 8 strips (about 3 cm / 1.25 in wide). Working one strip at a time, gently roll it up from one short end. If a strip cracks, pinch it together—once rolled, it will hold.
Step 7: Serve or pack
Eat as-is, or wrap individually in baking paper for lunchboxes.
