Step 1: Sauté the base
Heat oil in a large nonstick skillet over medium-high heat. Add onion and bell pepper with a pinch of salt. Cook, stirring, until the onion turns translucent and the peppers soften, about 4 minutes.
Step 2: Build the veggie skillet
Add zucchini, garlic powder, smoked paprika, and oregano. Cook until the zucchini is crisp-tender and you see golden edges, about 3 minutes. Add cherry tomatoes and cook 1 minute just to soften (you want them juicy, not collapsed).
Step 3: Wilt the spinach
