Lean-protein, veggie-packed zucchini boats baked until tender and topped with bright marinara for a satisfying, light Italian-style lunch that’s high in protein and fiber.
Step 1: Prep the zucchini boats
Heat oven to **425°F / 220°C**. Slice zucchini in half lengthwise. Use a spoon to scoop out the centers, leaving a **1/4-inch (6 mm) shell** all around to hold the filling. Finely chop the scooped zucchini flesh (this goes into the filling for extra veg and moisture).
Step 2: Pre-bake for tenderness
Arrange zucchini halves cut-side up in a large baking dish. Drizzle with **1/2 tbsp olive oil** and sprinkle with a pinch of the salt and pepper. Add **1/4 cup water** to the bottom of the dish (helps steam and prevents drying). Bake **10 minutes** until just starting to soften (they should still hold their shape).
Step 3: Cook the aromatic base
While zucchini pre-bakes, heat remaining **1/2 tbsp olive oil** in a large skillet over **medium-high**. Add onion and cook **3–4 minutes** until softened and lightly golden at the edges. Add garlic and cook **30 seconds** until fragrant.
Step 4: Brown the beef (keep it lean and flavorful)
Add ground beef, breaking it up with a wooden spoon. Cook **5–7 minutes** until no longer pink and you see some browned bits (that’s flavor). If there’s excess fat, carefully spoon off most of it.
Step 5: Build the filling
Add the **chopped zucchini flesh**, **Italian seasoning**, **oregano**, **red pepper flakes (if using)**, remaining **salt**, and **black pepper**. Cook **2–3 minutes** until the zucchini softens and the mixture looks juicy but not watery.
Step 6: Add marinara and simmer briefly
Stir in **1 cup** of the marinara sauce. Simmer **2 minutes** until thickened slightly and cohesive (you want a spoonable, not soupy, filling).
Step 7: Stuff and bake
Remove zucchini from oven. Spoon the beef mixture into each zucchini boat, mounding it up. Spoon the remaining **1/2 cup marinara** over the tops (or just a dollop on each). Sprinkle with **Parmesan** if using. Bake **12–15 minutes** until zucchini is tender when pierced with a knife and the sauce is bubbling.
Step 8: Rest and serve
Rest **5 minutes** (the filling sets and stays in the boats). Serve warm for lunch.
