Step 1: Soak skewers (if using wooden)
Soak wooden skewers in water for 20 minutes to reduce burning. If using metal skewers, skip.
Step 2: Marinate beef + vegetables
In a large bowl, whisk olive oil, lemon juice, garlic, oregano, cumin, smoked paprika, salt, and pepper. Add beef and all vegetables. Toss well until everything is lightly coated. Let sit while you heat the grill (or up to 20 minutes).
Step 3: Make the yogurt sauce
In a small bowl, mix yogurt, lemon juice, garlic (if using), herbs (if using), salt, and pepper. Taste and adjust lemon/salt. Refrigerate until serving.
Step 4: Skewer for even cooking
Thread beef and vegetables onto skewers, keeping similar items near each other when possible (beef pieces together helps cook timing). Don’t pack too tightly; leave tiny gaps so heat can circulate.
Step 5: Grill (or broil) until charred-tender
Preheat grill to medium-high (about 450°F / 230°C). Grill skewers 10–12 minutes total, turning every 2–3 minutes, until vegetables have char marks and the beef is cooked to your liking (aim ~130–140°F / 54–60°C for medium-rare to medium).
Step 6: Rest, then serve
