All the bright, herbaceous flavors of Vietnamese rice paper rolls—served as a vibrant, build-your-own bowl with caramelised lemongrass pork and punchy nước chấm.
Step 1: Marinate the lemongrass pork
In a bowl, mix pork, minced lemongrass, garlic, sugar, fish sauce, oil, and black pepper. Stir well until the pork looks slightly tacky (this helps it brown nicely). Set aside 10–15 minutes while you prep the bowls (or refrigerate up to 24 hours).
Step 2: Make nước chấm
In a small bowl, dissolve sugar in warm water. Stir in fish sauce, lime juice, garlic, and chilli (if using). Taste: it should be a balanced sweet-sour-salty punch. Adjust with a splash more water to mellow, or lime for brightness. Set aside.
Step 3: Cook the vermicelli
Bring a pot of water to the boil. Add rice vermicelli and cook per packet (usually 2–4 minutes) until tender but not mushy. Drain, rinse under cold water to stop cooking, then shake well. Toss with a tiny drizzle of oil to prevent clumping.
Step 4: Cook the pork until caramelised
Heat 1 tbsp oil in a large skillet over high heat. Add the pork in an even layer. Cook undisturbed for 2 minutes to develop browning, then break it up and stir-fry for 4–6 minutes until deeply golden in spots and cooked through. You’re aiming for “sticky-sizzly” bits—those are flavor.
Step 5: Prep the fresh components
Arrange lettuce, cucumber, carrot, bell pepper, bean sprouts, mint, cilantro, and peanuts on a big platter or across the table for high shareability.
Step 6: Soften rice paper (roll-bowl style)
Fill a wide bowl or pan with room-temp water. Dip 1 rice paper sheet for 5–8 seconds (it will still feel a bit firm), then lay it on a plate/board. Let it soften for 30–45 seconds until pliable.
Step 7: Assemble and eat
On each softened rice paper, add a small handful of lettuce, a nest of vermicelli, a spoonful of lemongrass pork, crunchy veg, and herbs. Fold it up loosely like a wrap (or keep it open like a “taco”). Spoon over nước chấm, shower with peanuts, and eat immediately.
