A bright, crunchy, flavor-packed noodle salad with juicy chicken and a punchy sesame-soy dressing that stays crisp right up to serving.
Step 1: Cook the noodles
Cook noodles in salted boiling water per packet directions until just tender (don’t overcook; you want springy noodles). Drain, rinse under cold water to stop cooking, then shake well to remove excess water. Toss with 1 tsp neutral oil to prevent sticking.
Step 2: Cook the chicken
Pat chicken dry, season both sides with salt and pepper. Heat 1 tbsp neutral oil in a large skillet over medium-high heat. Cook chicken 5–7 minutes per side (thighs) or 4–6 minutes per side (breasts), until golden and cooked through (internal temp 165°F/74°C). Rest 5 minutes, then slice thinly.
Step 3: Make the dressing
In a jar or bowl, combine soy sauce, vinegar, honey, sesame oil, neutral oil, ginger, garlic, and pepper. Shake/whisk until glossy and emulsified. Taste and adjust: more vinegar for tang, more honey for sweetness, chili for heat.
Step 4: Build the salad base
In a large bowl, combine cabbage, carrots, capsicum, green onions, and cilantro (if using). Add noodles and toss well to distribute the veg through the noodles.
Step 5: Dress and toss
Pour about 3/4 of the dressing over the salad and toss thoroughly (use clean hands or tongs for best mixing). Add more dressing as needed—noodles drink it up.
Step 6: Finish for maximum crunch
Add sliced chicken and toss gently. Top with almonds/peanuts right before serving so they stay crunchy. Serve immediately, or let it sit 10 minutes to let flavors mingle (still plenty crisp).
