A classic, light-but-satisfying lunch sandwich with creamy egg filling and crisp lettuce for fresh crunch.
Step 1: Hard-boil the eggs
Place eggs in a small saucepan and cover with cold water by 2–3 cm. Bring to a boil over high heat, then immediately turn heat down to maintain a gentle simmer for **9 minutes**. Drain, then run under cold water for **1–2 minutes** until cool enough to handle.
Step 2: Peel and mash
Peel the eggs. In a bowl, mash with a fork until you get a mix of small chunks and creamy bits (don’t puree—texture is the goal).
Step 3: Make the filling
Add mayonnaise, mustard (if using), chives/green onion (if using), lemon juice/vinegar (if using), salt, and pepper. Mix until creamy and spoonable. Taste and adjust salt/pepper—egg filling should be well-seasoned.
Step 4: Prep the bread
For extra-good texture, lightly butter the bread and toast in a pan over medium heat **1–2 minutes per side**, just until **light golden** (still soft inside). Cool for 1 minute so it doesn’t wilt the lettuce.
Step 5: Assemble
Lay lettuce over two slices of bread (this acts as a barrier to keep bread from going soggy). Pile the egg mixture on top, spreading to the edges. Cap with remaining bread, slice, and serve.
