A bright, classic Italian lunch salad with juicy tomatoes, creamy mozzarella, and basil, finished with a simple olive oil dressing that tastes like summer.
Step 1: Prep the tomatoes
Slice the tomatoes into 1/3-inch (8–10mm) rounds. Lay them on a plate and sprinkle lightly with a pinch of salt. Let sit 5 minutes to draw out juices (this seasons the tomatoes from within).
Step 2: Slice the mozzarella
Slice mozzarella into similar-thickness rounds. If it’s very wet, gently blot with paper towels so the salad doesn’t get watery.
Step 3: Build the salad
On a platter (or two lunch plates), alternate tomato slices and mozzarella slices, slightly overlapping. Tuck basil leaves between slices so you get basil in every bite.
Step 4: Dress
Drizzle evenly with extra-virgin olive oil. If using, drizzle balsamic vinegar lightly (a little goes a long way). Finish with the remaining salt and black pepper.
Step 5: Optional garlic perfume (very Italian trattoria-style)
Rub the cut side of the halved garlic clove lightly over the serving platter before assembling. It should smell gently garlicky, not pungent.
Step 6: Serve
Let the salad stand 2–3 minutes so the flavors meld, then eat right away while the tomatoes are juicy and the mozzarella is cool and creamy.
