Step 1: Toast the sesame
Heat a dry pot over medium heat. Add **sesame seeds** and toast, shaking often, until **golden and nutty**, about **1–2 minutes**. Tip into a bowl immediately so they don’t over-brown.
Step 2: Build the flavour base
In the same pot, heat **oil** over medium heat. Add **garlic** and cook until **fragrant and just starting to turn pale golden**, about **1–2 minutes** (don’t let it go dark). Add **chilies** and **black pepper**, stir 30 seconds.
Step 3: Make the broth
Pour in **water** (careful of steam), then add **salt** and **sugar**. Bring to a lively simmer and cook **10 minutes** so the garlic-chili base perfumes the broth. Taste: it should be **salty, peppery, and slightly sweet**—adjust salt if needed.
Step 4: Cook the noodles
Add **rice noodles** to the simmering broth and cook until **tender and slippery** (timing depends on noodle type—usually **3–8 minutes**). Stir gently so they don’t clump.
Step 5: Finish with leek
Add the **sliced leek** and simmer just until it **softens but stays fresh-looking**, about **1–2 minutes**.
Step 6: Serve
