Step 1: Cook the dal until creamy
Add rinsed red lentils and water to a pot. Bring to a boil, then reduce to a lively simmer. Skim any foam for a cleaner finish. Cook 12–15 minutes, stirring once or twice, until the lentils are very soft and starting to break down.
Step 2: Build the base (onion-tomato masala)
In a separate pan, heat 2 tbsp oil/ghee over medium heat. Add onion and cook 6–8 minutes until soft and lightly golden at the edges. Add ginger, the 4 sliced garlic cloves, and green chili (if using). Cook 1 minute until fragrant. Add tomatoes, turmeric, and a pinch of salt; cook 5–7 minutes until tomatoes collapse and the mixture looks thicker and jammy.
Step 3: Combine and simmer
Scrape the onion-tomato masala into the pot of dal. Stir well. Simmer 5–8 minutes to meld flavors. If it’s too thick, add a splash of hot water. For a smoother restaurant-style texture, whisk vigorously for 20–30 seconds (the dal will turn silkier).
Step 4: Make the tadka (sizzle finish)
In the same pan, heat 2 tbsp ghee/oil over medium-high. Add cumin seeds; when they sizzle and turn a shade darker (about 20–30 seconds), add sliced garlic. Stir constantly until garlic turns pale golden (30–60 seconds). Turn off the heat, then stir in chili powder (it should bloom instantly without burning).
Step 5: Finish and serve
Pour the hot tadka over the dal (it should crackle). Cover for 1 minute to trap the aroma. Taste and adjust salt and pepper. Serve with cilantro and a squeeze of lemon for brightness.
