Tender, deeply caramelised whole roasted cauliflower topped with a velvety mushroom-and-Gruyère sauce that eats like pure comfort.
Step 1: Heat oven + prep cauliflower
Preheat oven to **220°C / 425°F (200°C fan)**. Line a tray with baking paper. Place cauliflower on the tray (stem side down). Drizzle with **3 tbsp olive oil**, then rub all over (including into the florets). Sprinkle with **salt and pepper**.
Step 2: Roast until deeply golden
Roast for **45–55 minutes**, turning the tray halfway through, until the top is **deeply browned** and a knife slides into the centre with **little resistance**.
Step 3: Cook mushrooms hard for flavour
While cauliflower roasts, heat **2 tbsp olive oil** in a skillet over **high heat**. Add mushrooms and cook **6–8 minutes**, stirring occasionally, until they **release liquid**, that liquid **evaporates**, and the mushrooms start to **brown** (this browning is where the flavour lives). Add garlic and cook **30 seconds** until fragrant.
Step 4: Make the silky base
Reduce heat to **medium**. Add **butter** to the pan. Once melted, sprinkle over the **flour** and stir constantly for **1 minute** (it will look like a paste coating the mushrooms).
Step 5: Finish sauce: smooth + glossy
Add milk in 3 additions, stirring well each time so it stays lump-free. Simmer **2–3 minutes**, stirring, until thick enough to coat the back of a spoon (it should be **silky, not stodgy**). Stir in Gruyère a handful at a time until melted and smooth. Season with **salt, pepper**, and **nutmeg** (if using).
Step 6: Serve
Transfer whole roasted cauliflower to a platter. Spoon warm mushroom-Gruyère sauce generously over the top so it drips into the florets. Slice into wedges to serve.
