Creamy ricotta, jammy roasted tomatoes, and bright pesto turn sweet potatoes into a satisfying, dinner-worthy stuffed bake.
Step 1: Heat oven & prep potatoes
Preheat oven to **220°C / 425°F** (200°C fan). Scrub and dry the sweet potatoes. Pierce each **6–8 times** with a fork (helps steam escape).
Step 2: Roast the sweet potatoes
Place sweet potatoes on a baking tray. Rub with **2 tbsp olive oil**, then sprinkle with **salt and pepper**. Roast for **45–60 minutes**, flipping once halfway, until **very tender** (a knife slides in easily) and the skins look **slightly wrinkled**.
Step 3: Roast the tomatoes
When the potatoes have about **15 minutes** left, add cherry tomatoes to the same tray (or a second tray). Drizzle with a touch of olive oil from the tray (or a small drizzle if needed) and a pinch of salt. Roast until **soft and blistered**, **12–15 minutes**.
Step 4: Mix the ricotta filling
In a bowl, mix **ricotta + pesto**. Season with a pinch of salt and pepper to taste (pesto varies in saltiness, so taste first).
Step 5: Stuff & finish
Split each sweet potato down the center (don’t cut all the way through). Fluff the insides with a fork to make a little “well.” Spoon in the pesto ricotta, then pile over the blistered cherry tomatoes. Finish with a crack of black pepper and a small spoonful of extra pesto if you have it.
