Tender squash and chickpeas simmered in a fragrant saffron-spiced sauce, brightened with preserved lemon and finished with crunchy toasted almonds.
Step 1: Bloom the saffron
Crush saffron threads lightly between your fingers, then stir into 2 tbsp hot water. Set aside to steep while you start the base (this pulls out maximum aroma and color).
Step 2: Build the flavor base
Heat olive oil in a heavy pot or Dutch oven over medium heat. Add onion and cook until softened and lightly golden at the edges, 8–10 minutes. Add garlic and cook until fragrant, 30 seconds.
Step 3: Toast the spices
Add cumin, coriander, paprika, cinnamon, turmeric, cayenne (if using), salt, and pepper. Stir constantly for 1 minute until the spices smell warm and toasty (don’t let them scorch).
Step 4: Create the sauce
Stir in tomato paste and cook 1 minute to caramelize slightly. Add stock (or water), the bloomed saffron with its soaking liquid, and honey (if using). Bring to a lively simmer, scraping the bottom to dissolve any flavorful browned bits.
Step 5: Simmer the squash
Add squash chunks. Reduce heat to maintain a gentle simmer, cover, and cook for 15 minutes, stirring once halfway through, until the squash is just starting to turn tender.
Step 6: Add chickpeas + preserved lemon
Stir in chickpeas and preserved lemon peel. Cover again and simmer 10–12 minutes until the squash is very tender but still holding its shape and the sauce has thickened slightly. If it’s too thick, splash in a little water; if too thin, simmer uncovered for 3–5 minutes.
Step 7: Toast almonds + finish
In a dry skillet over medium heat, toast almonds, stirring often, until golden and nutty, 3–5 minutes. Taste the tagine and adjust salt/pepper. Serve topped with toasted almonds and cilantro/parsley if using.
