Step 1: Make the gentle broth
In a medium saucepan, bring the water and dashi powder to a bare simmer over medium heat (small bubbles, not a rolling boil), about 3 minutes.
Step 2: Soften the mushrooms
Add mushrooms and simmer gently until very tender and silky-soft, 5–6 minutes. Keep the heat low so the broth stays clear and calm.
Step 3: Warm the tofu (don’t boil)
Slide in the silken tofu cubes. Nudge them gently with a spoon so they don’t break. Warm through at a bare simmer for 2 minutes.
Step 4: Dissolve the miso properly
Turn the heat to low (no bubbling). Scoop about 1/2 cup of hot broth into a bowl, whisk in the miso until smooth, then pour it back into the pot. *(This prevents graininess and preserves miso’s delicate flavor.)*
