Lean beef and rainbow bell peppers are flash-stir-fried in a punchy, low-sugar sauce and served over fiber-rich brown rice for a light-but-satisfying lunch that supports steady afternoon energy.
Step 1: Cook the brown rice
Rinse 1 cup brown rice until the water runs mostly clear. Cook according to packet directions (typically 1 cup rice + 2 cups water, simmer covered 25–30 minutes). Rest off heat 5 minutes, then fluff.
Step 2: Slice the beef properly
Pat beef dry, then slice *thinly* against the grain (this is key for tenderness). If the beef is hard to slice, chill it in the freezer for 10 minutes to firm up.
Step 3: Make the spicy stir-fry sauce
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil (if using), chili garlic sauce, honey (if using), cornstarch, water, and black pepper until smooth.
Step 4: Sear the beef (fast and hot)
Heat a large wok or skillet on high until very hot. Add 1 tbsp oil, then spread beef out in a single layer. Sear 60–90 seconds until browned on the underside, then toss for another 30–60 seconds until mostly cooked. Transfer to a plate.
Step 5: Stir-fry the vegetables
Return pan to high heat. Add remaining 1 tbsp oil, then onion and bell peppers. Stir-fry 3–4 minutes until crisp-tender with a few browned edges. Add garlic and ginger and stir-fry 30 seconds until fragrant.
Step 6: Bring it all together
Return beef (and any juices) to the pan. Give the sauce a quick re-whisk, then pour it in. Toss continuously for 60–90 seconds until the sauce turns glossy and lightly coats everything. Taste and adjust: more chili for heat, a splash of water if too thick, or a tiny pinch of salt if needed.
Step 7: Serve
Divide brown rice among bowls and top with the spicy beef and peppers. Eat immediately for the best texture.
