A juicy, golden-seared chicken breast stuffed with creamy feta and spinach, served alongside caramelised Mediterranean-style roasted vegetables with bright lemon and garlic.
Step 1: Heat oven + prep tray
Preheat oven to **425°F / 220°C**. Line a large sheet pan with parchment (or lightly oil it). This high heat helps the veg caramelise instead of steaming.
Step 2: Roast vegetables (start them first)
On the sheet pan, toss **red onion, bell peppers, zucchini, and cherry tomatoes** with **2 tbsp olive oil**, **1/2 tsp oregano**, **a good pinch of salt and pepper**, and **half the minced garlic**. Spread out into an even layer (give them space—crowding = soggy veg). Roast for **15 minutes**.
Step 3: Make the spinach-feta filling
While the veg starts roasting, heat **1 tbsp olive oil** in a skillet over **medium heat**. Add remaining **garlic** and cook until **fragrant, about 20–30 seconds**. Add spinach and toss until **just wilted**, **1–2 minutes**. Tip into a bowl and cool for 2 minutes, then mix in **feta**, **lemon zest**, a pinch of **pepper**, and **smoked paprika** (if using). Taste and add a tiny pinch of salt only if needed (feta is salty).
Step 4: Butterfly and stuff the chicken
Pat chicken dry. Using a sharp knife, cut a deep pocket into the thick side of each breast (like a book), being careful not to cut all the way through. Divide filling between breasts, packing it in firmly. Secure with toothpicks if needed.
Step 5: Season and sear for color
Season chicken all over with **salt, pepper**, and remaining **1/2 tsp oregano**. Heat a large skillet over **medium-high heat** with **1 tbsp olive oil**. Sear chicken **2–3 minutes per side**, until **deeply golden** (it won’t be cooked through yet). This step builds flavor and helps keep the filling inside.
Step 6: Finish in the oven with the vegetables
Pull the sheet pan out of the oven. Stir vegetables and drizzle over **2 tbsp lemon juice**. Nestle the seared chicken breasts among the vegetables (leave any toothpicks in). Roast for **12–15 minutes**, or until chicken reaches **165°F / 74°C** in the thickest part. (If you don’t have a thermometer, slice into the thickest breast: juices should run clear and meat should be opaque.)
Step 7: Rest and serve
Rest chicken **5 minutes** (this keeps it juicy). Remove toothpicks. Serve each breast with a generous scoop of roasted vegetables, spooning any lemony pan juices over the top.
