A bright, fiber-rich Mexican-style lunch taco packed with roasted sweet potato, protein-dense black beans, and creamy avocado—nutritious, satisfying, and light enough to keep you energized all afternoon.
Step 1: Roast the sweet potatoes
Heat oven to **220°C / 425°F** (200°C fan). Toss sweet potato cubes with **oil, cumin, paprika, chili powder, salt, and pepper**. Spread on a lined tray in a single layer (don’t crowd, or they’ll steam). Roast **18–22 minutes**, tossing halfway, until **tender with browned edges**.
Step 2: Warm and lightly mash the black beans
While the sweet potatoes roast, add black beans, **water**, and **garlic** to a small saucepan over **medium heat**. Cook **4–6 minutes**, stirring, until hot and slightly thickened. Use the back of a spoon to **lightly mash about 1/3** of the beans—this makes them creamy and helps them cling to the tortilla. Taste and add a pinch more salt if needed.
Step 3: Warm the tortillas
Heat a dry skillet over **medium-high**. Warm tortillas **20–30 seconds per side** until **toasty and flexible**. (Keep them wrapped in a clean towel to stay warm.)
Step 4: Assemble the tacos
Spread a spoonful of beans on each tortilla, top with roasted sweet potatoes, then add **cabbage/lettuce (if using)** and **avocado slices**.
Step 5: Finish bright
Squeeze **lime** over the tacos, sprinkle with **cilantro**, and add **hot sauce** if you like. Serve immediately.
