A bright Mediterranean lunch bowl of smoky grilled vegetables piled over fluffy quinoa, finished with a creamy lemon tahini dressing that clings to every bite.
Step 1: Cook the quinoa
Combine rinsed quinoa, water, and a pinch of salt in a saucepan. Bring to a boil, then cover and reduce to low. Cook 14–15 minutes until the water is absorbed. Remove from heat, rest covered 5 minutes, then fluff with a fork. (It should look dry and fluffy, not wet.)
Step 2: Season the vegetables & chickpeas
In a large bowl, toss zucchini, bell pepper, eggplant, red onion, and cherry tomatoes with olive oil, cumin, smoked paprika, oregano, salt, and pepper. Toss chickpeas with a drizzle of olive oil and a pinch of the same spices (they’ll crisp up and become “crouton-like”).
Step 3: Grill (or griddle) until smoky and tender
Heat a grill, grill pan, or heavy skillet over medium-high until very hot.
Step 4: Make the lemon tahini dressing
In a bowl, whisk tahini, lemon zest, lemon juice, garlic, olive oil, salt, and pepper. Add water 1 tbsp at a time, whisking well, until it turns creamy and pourable (it thickens at first, then loosens into a smooth sauce). Taste and adjust salt/lemon.
Step 5: Assemble the bowls
Divide quinoa between 4 bowls. Pile on grilled vegetables and chickpeas. Spoon generously with tahini dressing. Finish with chili flakes and extra lemon if you like.
