Step 1: Heat the oven and prep the pan
Preheat the oven to **200°C (400°F)**. Line a baking tray/sheet pan with parchment paper.
Step 2: Sauté the aromatics
Heat the **olive oil** in a skillet over medium heat. Add the **onion** and cook **3–4 minutes** until soft and translucent. Add the **garlic** and cook **30 seconds** until fragrant.
Step 3: Cook and dry the spinach
Add the **spinach** and cook, stirring, until wilted and most moisture evaporates. If using **frozen spinach**, squeeze it very dry first, then briefly cook it in the pan to drive off any remaining moisture. Remove from heat and **cool completely**.
Step 4: Mix the filling
Add the cooled spinach mixture to a large bowl. Add the **feta, ricotta (or cream cheese), 1 egg, salt, pepper, and oregano (or dill)**. Stir until evenly combined and creamy (not watery).
